THE EXCELLENCES OF FOOD VALLEY
We are in the western part of Emilia Romagna, where there are three routes that are nothing short of 'tasty': the Strada del Prosciutto and the Colli Wines, the Strada del Fungo Porcino and the Strada del Culatello di Zibello, which let you taste products unique in the world. But the delicacies of our territory do not end there: the Felino salami, Parmigiano Reggiano and tortelli complete a rich gastronomic offer
An authentic masterpiece of sweetness, a good, healthy and genuine product, free of preservatives and additives, which gives each slice an explosion of unique flavor. Every year, in September, in the nearby Langhirano, the Ham Festival lets you know and taste this excellence of the territory through stands along the streets of the historic center and guided visits to local ham factories.
A culinary marvel, a specialty of Italian origin, produced only in the provinces of Parma, Reggio Emilia, Modena, Bologna and Mantua. Its taste is sweet, but at the same time salty, and leaves the palate with a slightly acidic aftertaste. For those who want to enjoy it, discover how it is produced and chat with the cheesemakers, there is the possibility of participating in "Open Dairy", the Consortium's initiative that allows visitors to visit the dairies.
CULATELLO OF ZIBELLO
It is the undisputed prince of crud meats. It is obtained from the noblest part of the legs of Italian pigs and is unique delicacy and unmistakable for its shape, flavor and intense aroma. The Spigaroli family deserves the merit of having created the Museum of Culatello and Masalén, a space completely dedicated to the king of cold cuts, a journey to discover the territory, the black pig and the culatello, open to anyone who wants to learn more about its history.
What could be better than a good glass of wine to drink with friends? Our territory offers a wide choice of red and white wines, still and sparkling, to accompany first courses, main courses and desserts. The wines of the Parma Hills include Lambrusco, aromatic Malvasia di Candia, Rosso Colli and Sauvignon blanc. Among the Colli Piacentini wines, on the other hand, we find Barbera, Bonarda, Gutturnio and Ortugo. The ideal place for a tasting? Bacedasco, the land of wine, where vineyards blend with green of the hills and the blue of the sky.
This is the jewel of Felino, a salami with an enveloping, intense and aromatic taste. Its cylindrical and irregular shape, its white outer surface, tending towards grey, its lean and homogenous slice, its intense red colour, make it a realgodness, not be missed and absolutely to be tried, better if in the company of good glass of wine.
Parma is famous all over the world for its cold cuts, but other delicacies make its gastronomic offer unique. Those who stay in the Food Valley cannot miss the fried cake, the perfect accompaniment for local meats, Anolinin broth or Tortelli of herbs.
FICO – Italian Farming Factory – EatalyWorld
It’s the largest food park in the world. You can cross it on foot or by bike, letting yourself be guided by nature, by the scents and by the stories of the producers. It is a journey that involves all the senses and allows you to appreciate the wonder of Italian biodiversity through factories, restaurants, markets, shops, crops and farms. FICO is easily accessible by car or train (once in Bologna you can board the Fico-bus, the shuttle that leaves from the city center).
